If I’m using the Easy Fermenter lids by Nourished Essentials (which I just got as a gift), do I still need to submerge the vegetable mixture below the brine with a weight? Do I need to remove the air with the oxygen remover that it comes with while it's fermenting, just when it's in the fridge … or not at all?

I always recommend a weight to hold everything below the brine, no matter which lid you're using. Some believe you don't need a weight if your container is airtight. I have yet to find that to be the case.

You don't need to use the Nourished Essential pump (for extracting oxygen) during the first week of fermentation. The CO2 that the bacteria produce forces the oxygen out of the airlock during this time.
​
If you're using the lid for storage, you can use the extractor pump to seal the jar after opening it to eat some of your ferment.
