Hey Reader,

My taste buds never did a happy dance πŸ’ƒ when I saw an assortment of fermented vegetables on my dinner plate many years ago.

I was teaching πŸ‘©β€πŸ« at a military base in Germany back in the late 1980s, and just about every meal that I ate out at our local Gasthaus included a bland-looking assortment of pickled vegetables.

Fast-forward to where I eagerly await each vegetable πŸ‘©β€πŸŒΎ as it comes into the season so that I can transform it into a delicious probiotic powerhouse. Not only am I enjoying their crunch, but they are full of goodness and worth adding to your diet.

I am attaching a picture looking down into my crock making cabbage sauerkraut and am wondering if I should be concerned over these white things floating on top?

When you see something growing in your ferment, it's either Kahm yeast or mold. Kahm yeast tends to cover the whole surface as a thin white powder, while mold, at least at the beginning, appears in separate spots in a variety of colors.

What I see looks like bits of mold.

Scoop them out. Unless there are noxious odors, it is OK to eat.
