Hey Reader,

Just harvested.

116 heads of garlic. WOW! My husband is the wizard behind that beautiful bounty.

I know that I'll use a couple dozen of them to restock my depleted supply of Fermented Garlic Paste that I learned how to make years ago from a recipe in Fermented Vegetables.

The rest will be used for cooking and fermentation recipes throughout the year.

I add fermented garlic paste to season my sauteed greens, toss with homemade oven fries and even spread on toast. The flavor is subtle but oh-so-good.

It's super easy to make and takes a month to ferment. You'll need a food processor. During fermentation, flavors mellow, and the color turns a beautiful caramel.

One thing that I haven't seen addressed is whether fermentation can be halted and then restarted again. For example, I may wish to leave town before a ferment is completed but would like to turn my thermostat up to save money on electricity. If I put the ferment in the refrigerator while I'm gone, can I restart it by removing it from the refrigerator, or will it ruin the ferment? Have you ever tried this yourself?

You can stop and restart fermentation if the ferment is at least 7 days old. The first week is a crucial time for the first stages of fermentation that you would not want to interfere with.

I've accidentally stopped a ferment by putting it in the fridge after day one. I never got it to ferment and ended up with a smelly mess.
